Slow Cooked Mexicali Chicken

Tasty, tender and lean, this slowed cooked chicken breast is perfect for soft shell tacos or served over a bed rice and beans and greens..  The slow cooker does most of the work, just have all your favorite taco toppings ready for a delicious meal!  I like to have fresh pico di gallo, ripe avocado, shredded cheese, sour cream and sliced black olives for topping..

Ingredients:

3 lbs chicken breast

2 cups prepared salsa

1/2 tsp. sea salt

1 tsp. ground cumin

1 tsp. chili powder

1/2 tsp. smoked paprika

1/4 tsp. ground black pepper

  1.  Place the chicken in the slow cooker.  In a small bowl combine the salsa, salt, cumin, chili powder, smoked paprika and ground black pepper.  Pour the salsa mixture over the chicken.  Cook on high for 3 hours then reduce to low for the last 1-2 hours until the chicken is tender and shreds easily with a fork.
  2.   Serve the chicken with your favorite taco toppings, with tortillas and or beans and rice and greens.
