Caprese Salad

Summer tomatoes and fresh basil at their best..everyone loves a good Caprese salad..I like to serve this traditional, simple salad over a bed of greens with a crusty bread and olives..

serves: 6-8


4 roma tomatoes, (seeds removed and diced) or 1 pint cherry or grape tomatoes sliced in half

3-4 cloves garlic, peeled

1/2 tsp sea salt plus additional to taste

1/3 tsp fresh ground black pepper

1/3 cup aged balsamic vinegar (preferably aged over 14 yrs)

1/3 cup extra virgin olive oil

2 Tbsp fresh lemon juice or apple cider vinegar

3/4 cup fresh basil, shredded

1 pound fresh mozzarella cheese, cut in cubes

6 cups chopped lettuce or mixed greens (optional)

black olives (optional)

  1.  Place the tomatoes in a large bowl.  Place the garlic cloves on a cutting board, sprinkle them with sea salt then using a large knife mince.  This brings out the garlic flavor. Add the garlic to the tomatoes along with the black pepper, balsamic vinegar, olive oil and lemon juice.  Stir until combined and let rest for 2-3 hours.
  2. Next stir in the fresh basil and mozzarella.  Add additional salt and pepper to taste and serve over a bed of fresh greens and with your favorite crusty bread and olives too..
