Light and lemony with veggies and capers, this tuna salad is top notch! Enjoy it on it’s own, with mixed greens, cucumbers, crackers or as a melt..my kiddos favorite way..
1 can chunk light tuna in water (preferably sustainable)
1 small carrot, shredded
1 stalk celery, minced
1-2 Tbsp onion, minced
1 1/2 Tbsp capers with 1 Tbs. juice
1 1/2 Tbsp fresh lemon juice
1 1/2 Tbsp yellow mustard
1-2 Tbsp organic mayonnaise or avocado oil
1/4 tsp dried dill or 1 Tbsp fresh dill, minced
1/4 tsp sea salt
1/8 tsp ground black pepper
- Drain the tuna and add it to a bowl along with the remaining ingredients. Stir until well combined and chill until serving.
- Serve over greens, with crackers and cucumbers or as a melt. For those who like heat add pickled or fresh jalapenos, yum!
- To make a melt preheat the broiler. Spread the tuna on your favorite toast, bread or bun. Top with your favorite cheese..I think cheddar is best but Swiss and muenster taste good too. Place the melt on a sheet pan and broil until the cheese is melted. Enjoy!
